Stress Free Granola

So I had a very stressful day today and release myself I've decided to bake which is something I refuse to do because what I bake never comes out as it supposed to. But today being a very stressful and wanting something sweet that's vegan so I thought baking would be the right remedy to my stress. Baking being my least of my skills instead of the granola turning into a granola bar it turned into a granola cereal, which is fine because I can still eat it either for breakfast or late night snack.  I love granola bars and cereal because it has many nutritional values; that could help lower your cholesterol and prevent certain chronic diseases. When I came first became vegetarian I had no idea what I was doing; my initial motive was driven by a desire of losing weight, but as the years went by it turned into a lifestyle driven by a concern of how unsustainable our current food system is. As well as general concern with the increase industrialization of our food system; this concern was further reinforced when I read Michael Pollan book The Omnivore's Dilemma: A NaturalHistory of Four Meal s, a fantastic book that provides a critically look into our food industry. I an cannot say precisely when I turned vegetarian I might be now 11-12 years now, but it does not matter to me anymore because is sorta a life style to me now. The question I always get when people find out that I am a vegetarian and “Part –time vegan” is where do you get your protein then don’t you miss bacon. The second question is funny because I’ve NEVER had bacon in my life before so the idea of me missing something I’ve never tried before is just downright stupid. The misconception people have regarding non-meat eaters is that we deprive of ourselves of everything particularly the delicious food specifically those consists of meat e.g., BLT. Vegan Gluten Free Pancakes

I realize today that I haven’t had pancake in YEARS! (5-6 years)! So for lunch I thought why not have pancakes! To be honest the only reason I don’t do a lot of baking it’s because I suck at baking. I love cooking but not baking. I know making pancakes is not really baking, but in my book it is baking. I have to say though that this pancake turned out way better than I expected it to be, and it was delicious.
