Kale and Eggplant Salad

So its been two months since I last blogged, and a lot has happened apart from almost finishing my undergrad, I got accepted to Grad school and will be leaving this lovely and peaceful city to the big city Toronto. But enough about that, time to talk about food and food. Given my recent unhealthy eating, which consists, of eating a whole bag of Lays salt and vinegar chips I think its time to go back to eating green and raw. I had a chance to look over my health books and came across Michael Pollan’s book “Food Rules” which I bough maybe three years ago, on part of the book Pollan’s opens the chapter with the simple question of; what kind of of food should I eat? And the answer is mostly plants, especially leaves. Juicing and Headstand

         So it’s been a while since I last blogged, and a lot has happened since the last time. Some good, bad, and some eye opening experience that I needed in order to let go. For today ‘ll try to keep things on the good side. First I got a position with my school that is similar to a teaching assistant, however realizing that I’ll have students looking up to me like I am teachers scares the hell out of me. Regardless, I cannot wait to start I always look forward to new challenges. Another good news I’ve been practicing a lot lately, and I have finally conquered one of my biggest challenge of the summer that’s doing a headstand, which started slow but after falling twice on my back I realized that’s the worst that could happen. So, finally I can do it without the aid of a wall. Once your legs are up in the air you can experiment with them, and try different pose like tree, happy baby pose or forward bend. My chakras are so not aligned

I Love this video; I literally laughed through the whole time while watching this video. It pains me to admit this but, half of the things that they said in the video are things that I find myself saying almost everyday, for example the other day I was talking to a co-worker and I remember saying to him; " I've been so distracted lately, my chakras are so not aligned. I need to do hot yoga to aligned them".  So, I still have the Swiss chard that i bought from the farmers' market, so I decided to make a simple green soup with tahini.  INGREDIENTS  •     A handful of Swiss chard  •    3 large spoon of tahini  •    1 tbsp. Long Weekend - stir fry potatoes and Sauté Swiss chard

I hope every Canadian had a great adventurous Canada day. This long weekend was pretty good, full of adventures and fun times. On Canada day instead of going all crazy, and wild like any 20 something girl university student would on days like that; a friend and I went out for Mexican food at Ahora ; a really cute, and cool Mexican restaurant. We had some beaver tail on our way home, and watched the fireworks from the roof top of my house; which was a little hard to see because there was a tree blocking our path. Despite it, it was a good Canada day. Also on this long weekend I had the chance of going to the farmers market on the Byward Market.   I wasn’t able to get a lot of things, but managed to buy some yummy leafy greens, and another plant to add to my garden. I decided to be semi adventurous, and get Swiss chard; which I’ve never tried before, or even cooked. However, to my surprise it actually like it, and managed to create a recipe out of it...
